I couldn't find a cooking thread and the food thread is so full of the pink slime poison peanuts nasty side of food.
My kid asked for my chili recipe and I figured that as long as have to write it out, I may as well give y'all a chance to make a really good chili.
mush of the recipe comes to me from a top Pensacola chef - but I changed quite a bit - for the better

Enjoy
My Chili
3 lbs chuck – trimmed and cubed
8 slices bacon
3 large onions – chopped
6 or 8 garlic cloves – minced
2 small tomatoes
1 can Hot Rotel
2 t. brown sugar
5 T. cumin
3 pasilla peppers – seeded and chopped
3 t. black pepper
1/2 cup chili powder
4 cups beef broth – Better Than Bullion brand is best
½ - 1 cup of strong coffee
2 cups shredded cheddar
A bottle of tequila and some beer
In a big deep cast iron pan cook the bacon. When done, remove and set aside.
Then brown the cubed beef. Do this in batches and set aside.
Sauté most of the onions – (retain the rest for garnish)
Add garlic and the rest of the spices to the onions and continue to sauté for a couple of minutes
Add meat, tomatoes, coffee and broth and simmer for about 2 hours.
Serve with chopped raw onion and cheese on top and with beer and tequila on the side. Some people serve it over rice – weird.
The spices should thicken the liquid. If you need to thicken more, increase the chili powder and cumin as necessary.
Please, no beans.

That sounds really, really good. I never thought about adding coffee. No beer or tequila for me, so I'd open up the biggest red available.

Is beans/no beans one of those regional warfare topics? Like barbecue sauce?

For a quick meal, mix those Rotel tomatoes -we like the lime and cilantro version- with a can of black beans. Cook a bag of brown rice and voila! Top with cheese, sour cream, onions, avocado, or most anything.

I'm hungry. Give me a spoon and a can of those tomatoes.

Yummm. I put cilantro in mine, and sometimes a can of corn.
