All hail the King
Growing up I was never much of an Elvis fan. At first he just wasn't hip enough, and then he tried to be hip and wasn't. Then he died. Oh, and he made beach movies.
The older I get the more I realize what a part he is of my own personal soundtrack. He was the King and had a hell of a take on a peanut butter sandwich. Thanks Elvis, for the grilled peanut butter tip.
I use a better bread than the poor excuse white bread he once used, chunky real peanut butter, honey, bananas and occasionally for some crunch, Fritos. Then grill (fry) this fantastic creation in a little more butter than needed.
Thanks again, you are remembered and I know what made you so damn fat.

Not many realize it, but the half lip snarl Elvis was famous for was only due to him trying and failing to dislodge a singed peanut butter glob from the roof of his mouth. What an effortless garden i have this year. Dude approached me about planting a garden on a vacant lot I own. We worked out a fairly standard share cropping deal, with me paying for everything and him doing the work.
I really didn't expect much. Man, was I ever surprised, he's got almost a half acre planted and well kept.
Maters aren't ready yet, but the okra has produced enough for a killer pot of gumbo - regular smoked sausage (no chitterlings), shrimp and some lump blue crab.
Served with a homemade baguette, dinner was great.

Blackeyed peas and Hog jowl with plenty of my grandmother's recipe for green tomato sweet relish and my "everyting" corn bread muffins cooked in her cast iron muffin pan - it has scalloped sides for making loads of wonderful crust and a side of collards.

That's a nice pan. Lady O makes some really good cornbread, but carrying around cast iron cookware in a motorcoach isn't her preference. What makes yours an "everything" version? Hers looks a lot like this:

It was indeed. We didn't use the shredded parsley, but otherwise made it like that. I usually grill salmon with a crust of Paul Prudhomme Salmon Seasoning and fresh ground black pepper on olive oil. For halibut and similar light fish, I usually use the olive oil with only sea salt and the black pepper. But I thought I'd try something different. Won't be the last time. I've found that some ingredients matter more than others. You can use cheap wine, but only really good olive oil. Pepper from a can isn't the same as fresh ground. The topic interested me since I've heard eco-cautions about Chilean sea bass. Apparently "sea bass" is applied to a bunch of species:

California ones look to include:
Barred sand bass - "Populations are stable, likely due to recreational fishing regulations and a ban on commercial fishing of the species." I guess that rules out what you bought.
Giant sea bass - "protection from commercial and sport fishing that went into effect in 1982."
White seabass - More info. Looks like this is most likely what you got. The Monterey Bay Aquarium Seafood Watch list rates it a "Good Choice".
They rate species worldwide and their site is easy to use:

I love the physical place, and took a whale watching trip out of there.
That's it for the Wiki list, but there might be other species sold as "sea bass", habitat distribution may have changed, or the regs might have changed.
I learned that "Chilean sea bass" is a marketing term for the Patagonian toothfish. Seafood Watch says "GOOD ALTERNATIVE" or "AVOID" depending on where caught:

Ironically, avoid any from Chile. I'm not sure if provenance can be trusted, though. May be best to just avoid entirely.
