That's an expensive place. Lotta people at that time might only make $2.00 or less per day. It's a rich person's meal, fershure.

Never tried it myself, but I've seen somebody else do it. Guy actually knew what he was doing and there was little drama but it turned out really good. Even so, I prefer the traditional roasting, if for no other reason than the fragrance it creates in the house.

Been putting them on the grill for 30 years, gas or charcoal. Grilled is good. I've done that a couple of times but with just turkey breast, not whole birds. Easiest turkey I ever had was one that came in a cook-in-bag. put it in the oven frozen, take it out a couple of hours or so later and it's perfect. Dunno why but I don't think they make those anymore. Probably killed a couple of rats or something.

For years I had smoked about a 12 pounder on my Green Egg. Inject with some "Emeril's" marinade and would come out so moist. Use mesquite wood chips. With weather this year I am glad I am not doing it.

Eggs are great, they can do anything.
